  • 1 cup oats
  • 1 cup milk
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 tsp baking soda
  • 5-6 tsp desi ghee
  • saffron 15 strands

How to make Rabdi Malpua

  1. First take the utensil pot, put in all the 3 liter milk and keep it on a high flame to boil. Stir it continuously.
  2. When it becomes 1/2 portion then add in khoya and stir it well.
  3. After 4-5 minutes of boiling, add the sugar, cardamom powder and dry fruits. Mix in all the ingredients and stir till it becomes thick in texture.
  4. Turn off the gas and keep aside for cooling. Once it's cooled, keep it in the fridge.
  5. For the malpua, take a bowl, put in the wheat flour. Grind the oats in fine powder, then mix it with wheat flour, add milk to the pouring batter and add 1/4 tsp soda. Mix it properly then keep it aside for 15 mins.
  6. To prepare the sugar syrup, take another vessel, put in sugar, water, cardamom powder and 6-7 saffron strands. Let it boil on a low flame.
  7. When the sugar syrup is formed then turn off the stove. Keep it aside.
  8. Now take a dosa pan, put in desi ghee to heat. Cook the small malpua and roast it both sides, then dip it in the sugar syrup for 2-3 mins.
  9. Take a serving dish and arrange the malpova, then put the rabdi on it and some dry fruits pieces and saffron strands on it.
  10. Serve the hot malpua with cool and delicious rabdi.

My Tip:

A very delicious and tasty rabdi malpua, you must try it!
