Ingredients Serving: 3

  1. For Masala
  2. 1 teaspoon oil
  3. 1teaspoon urad dal
  4. 3 Kashmiri red chilli
  5. 1 teaspoon chana dal
  6. 1/4 teaspoon fenugreek seeds
  7. 1 teaspoon coriander seeds
  8. 1 inch cinnamon stick
  9. 2 teaspoon dried coconut
  10. 3 cardamom
  11. 3/4 teaspoon poppy seeds
  12. 3 cloves
  13. For Rice:.
  14. 2 cups cooked rice
  15. 18-20 brinjal 1 inch pieces
  16. 4 teaspoon oil
  17. 1 teaspoon mustard seeds
  18. 1/2teaspoon chana dal
  19. 1/2 teaspoon urad dal
  20. 3 teaspoon peanuts
  21. 6 tbsp tamarind extract
  22. 1 very small piece of jaggery
  23. 1 teaspoon salt or as per taste
  24. 2 tbsp chopped coriander leaves
  25. 5-6 curry leaves
  26. 1-2green chilli slit lengthwise
  27. 1 dry red chilli

Instructions

  1. in a pan, add one teaspoon oil and fry dry red chili mentioned under masala section till they puff up keep it aside
  2. Add all the remaining ingredients mentioned under masala section roast on medium flame until aromatic allow them to cool completely and trying to fine powder
  3. heat 4 teaspoon oil in a pan
  4. splutter mustard seeds add urad dal chana dal red chilli and curry leaves
  5. Saute until golden brown
  6. add green chili, chopped brinjal and groundnuts.Stir fry until brinjals shrink in size
  7. Add tamarind pulp, salt and jaggery. Mix well
  8. Add 2 tbsp of ground masala. Anything excess store in airtight container for future use
  9. Add turmeric and mix well. Cook until water evaporates
  10. Add cooked rice and gently mix until well coated with masala
  11. Garnish with coriander leaves. Serve hot
