Ingredients to make Chunkies

  • 270 grams all purpose flour(maida)
  • 4 teaspoon corn flour
  • 2 tablespoon curd
  • 170 grams butter (salted)
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 2 teaspoons vanilla essence
  • 100 grams milk chocolate(cut into small chunks)
  • 100 grams dark chocolate (cut into small chunks)
  • 200 grams caster sugar

How to make Chunkies

  1. Melt butter in the microwave and set it aside to completely come to room temperature.
  2. In a mixing bowl, mix maida, baking powder and soda and corn flour.
  3. In another bowl, pour butter and sugar and cream well. Add vanilla essence and curd. Mix until just combined.
  4. Start adding the dry ingredients and fold them in gently. Do not over mix. Just incorporate it. Form a soft and little sticky dough. Also fold chocolate chunks in it. (reserve some chunks for later use)
  5. Cover the bowl and refrigerate it for an hour.
  6. Preheat the oven to 160C.
  7. In a baking tray, scoop out small chunks of the dough. Make thick and elongated balls as they will spread while baking. Bake at 160C for 12 minutes or until done. Time may vary.
  8. Once they are baked, put some 3-4 pieces of chocolate on the top and carefully press it on the cookie. Keep the cookies in open for 30 minutes or until they have completely cooled and store in airtight container.
