ABOUT Aloo Egg Masala Curry RECIPE

Andhra Style Egg Curry in combination with Potato and Spinach. Aloo Egg Masala Curry is a simple, easy South Indian side dish. The combination of egg and potato has always been appreciated by people. The egg is first boiled, marinated and then fried, which gives it a strong flavor of spices. The potatoes are sautéed with a lot of spices adding that savory taste to it. The sautéed tomatoes give the curry a slight tangy taste. The ginger garlic paste makes the dish more refreshing with the boiled potatoes and eggs. The monotony of the boiled eggs with the outburst flavors of the spices makes it an amazing dish. Plus the calorie content of the dish is just perfect to every age group. Aloo Egg Masala Curry is a fantastic side dish with chapattis or any kind of flavored rice.

Ingredients Serving: 3

  1. Tomato - 3 chopped
  2. Onion - 2 chopped
  3. Green chillies - 2 big
  4. Potato - 1 big
  5. Red chillies - 1 big
  6. Ginger - 2 small
  7. Garlic - 5 cloves
  8. Mint leaves - 10-15 leaves
  9. Coriander leaves (as per required)
  10. Cumin powder - pinch
  11. Coriander powder - pinch
  12. Sugar - pinch
  13. Boiled eggs - 3
  14. Oil - 4 tbsp
  15. salt as per taste
  16. Garam Masala - pinch
  17. Chat masala - pinch
  18. Jeera - 1/2 tbsp

Instructions

  1. Boil eggs with hot water and add salt, after eggs boiled peel the outer and keep them aside.
  2. After cooled, take a pan with oil heated little bit. In the meanwhile, rub the eggs with salt, turmeric, and chilli powder. Fry the powdered eggs in the pan until golden brown and keep them side.
  3. In the same pan, add some jeera, chopped potatoes and fry till crispy, keep them aside.
  4. Grind green chillies, red chilli, ginger and garlic with pinch of salt add to a thick paste.
  5. Heat oil in the pan, add grind paste, and chopped onions, fry till translucent, then add cumin powder, coriander powder, turmeric, chilli powder, salt to taste, and sauté for a min, then add chopped tomatoes, fry till tomatoes leave rawness, then add little water as per gravy required with few drops of lime water.
  6. After tomotoes are cooked, add fried potatoes and mix well until all the ingredients mix well, add mint leaves now, add fried eggs, leave with lid closed till 05min
  7. Garnish with coriander and enjoy
