Ingredients Serving: 1

  1. All purpose flour - 1/3 cup
  2. Sugar - 4 Tbsp
  3. Baking powder - 1/4 tsp
  4. Ground Cinnamon - a pinch
  5. Salt as per taste
  6. Banana - 1/2 (medium size)
  7. Oil - 1 tbsp
  8. Soy milk - 2 tbsp
  9. Vanilla - 1/4 tsp
  10. Toasted Almonds - for garnish
  11. Frosting Ingredients:
  12. Vegan Cream cheese - 1 & 1/2 tbsp
  13. Powdered Sugar - 1 & 1/2 tbsp
  14. Soya milk - 1 tsp
  15. Vanilla essence - 1 tsp

Instructions

  1. In a mug add flour, sugar, baking powder, cinnamon and salt. Swirl with a spoon.
  2. Add in the wet ingredients and swirl again. Make sure to mix from the bottom of the mug.
  3. Microwave on high for 2 - 2.5 minutes until a toothpick inserted in the center comes out clean.
  4. For the Frosting:
  5. Using a hand blender mix all the ingredients until light and fluffy. Add it on top of the mug cake.
  6. Sprinkle toasted almonds for garnishing.
  7. Eat while it is warm for best experience.
