Ingredients Serving: 2

  1. Cardamom powder - ĵ tsp
  2. Chicken breasts - 2 or 3 (cubed)
  3. Chilli powder - ½ tsp
  4. Cinnamon - ĵ tsp
  5. Dried Fenugreek - handful
  6. Dried curry leaves - handful
  7. Evaporated milk or cream - ĵ cup
  8. Fresh Ginger - 1 (3 to 4 inch piece chopped)
  9. Ginger - 1 large tsp (freshly grated)
  10. Garlic cloves - 4 or 5 large
  11. Garlic paste - 1 tsp
  12. Green cardamoms - 8 or 10
  13. Ground cloves - ĵ tsp
  14. Garam masala powder - ĵ tsp
  15. Lemon juice - 1 & ½ tsp
  16. Onion - 1 large (diced)
  17. Paprika - 1 tsp
  18. Salt - 1 tsp
  19. Tomato Puree - 1 cup
  20. Black pepper powder as per taste
  21. Sugar - 1 tsp
  22. Tomato puree - 1 tbsp
  23. Vegetable oil as required
  24. Yogurt - 1 cup

Instructions

  1. In a bowl mix yogurt with garam masala powder, cardamom powder, tomato puree, lemon juice, garlic paste, grated ginger,and paprika.
  2. Pour this marinade mixture over the chicken.Mix well. Cover and place in the fridge for a few hours to marinate.
  3. Place a large pan on a medium flame. In some oil fry the onions till they soften.
  4. Add in chopped garlic and chopped fresh ginger. On a low flame cook for 2- 3 minutes. Add in the tomato puree, curry leaves, Fenugreek leaves, cardamom pods, cinnamon, cloves, sugar, paprika, chilli, salt and black pepper.
  5. Simmer on a low flame for 8-10 minutes stirring frequently. Transfer into a blender and pulse into a paste. Refrigerate.
  6. When cool, strain this paste to remove any seeds. Transfer in a shallow pan on a low flame for about 10 minutes. (Do not let it boil)
  7. Melt butter in a deep dish pan, add in the marinated chicken. Pour in all the yogurt and stir for about 5 to 10 minutes.
  8. To this sauteed chicken add the warmed up tomato gravy. Simmer and cook for 10 minutes.
  9. Keep stirring now and then, check when the chicken is done.
  10. Pour in the cream, stir and continue to cook on low for another 2 minutes.
  11. Serve with hot.
