Ingredients Serving: 4

  1. Prawns large 800 grams , shelled out , deveined , cleaned and drained
  2. Ginger garlic paste 1 teaspoon +1 teaspoon
  3. White pepper powder 3/4 teaspoon
  4. Salt 1/2 teaspoon
  5. Melted butter 1 teaspoon for marination
  6. Butter 1 .5 tablespoon for greasing
  7. Bread crumbs 1 cup
  8. For Cooking rice :
  9. Basmati rice 4 cups soaked for 20 minutes , drained
  10. Water 3.5 cups
  11. Butter 1 tablespoon
  12. Salt 3/4 teaspoon
  13. Other ingredients :
  14. Bay leaves 4
  15. Cloves 6
  16. Cinnamon stick medium 2
  17. Whole black pepper 2 teaspoons
  18. Star anise 3
  19. Green cardamom 7
  20. Green chilies 4
  21. Onion big sized 2 finely chopped
  22. Garlic fat cloves 10 finely minced
  23. Tomato big 1 finely chopped
  24. Oil 2 tablespoons
  25. Butter 6 tablespoons + 3 tablespoons
  26. Garam Masala powder 1 teaspoon
  27. Red chili powder 1/2 teaspoon
  28. Salt as required
  29. Mint leaves 1/2 cup
  30. Cilantros 1 cup chopped

Instructions

  1. Marinate prawns in a teaspoon of ginger garlic paste , 1/2 teaspoon salt , 1 teaspoon butter , white pepper powder for 15 minutes under refrigeration .
  2. Grease a pan with 1.5 tablespoons butter .
  3. Roll marinated prawns on bread crumbs spread on a plate . See every prawn is coated well .
  4. Place the coated prawns on the butter greased pan .
  5. Cover the pan and bake the prawns in low heat for 10 to 12 minutes . Do flip sides in between for even baking .
  6. Don’t over bake . Golden colored prawns with bread crumbs roasted texture will do .
  7. While prawn is getting baked , cook the rice with the ingredients listed under cooking rice section . Don’t over cook the rice .
  8. Fluff the 80 % cooked rice immediately with a fork . Keep it aside .
  9. Coming to the pulao , heat a wide heavy based pan .
  10. Heat oil and 6 tablespoons butter.
  11. Add bay leaves , cloves , cinnamon sticks, cardamom , star anise .
  12. Add 1 teaspoon ginger garlic paste and green chilies .
  13. Add minced garlic .
  14. Sauté till raw smell leaves .
  15. Add the onions and sauté till translucent .
  16. Add remaining salt at this stage .
  17. Add tomatoes and sauté until mushy .
  18. Add Garam Masala powder .
  19. Add red chili powder .
  20. Add mint leaves and half of the cilantros .
  21. Mix and cook until masala looks glossy .
  22. Now add the baked butter prawns .
  23. Toss gently . Reserve few Masala and prawns in a bowl .
  24. Spread the prawns and masala as the first layer .
  25. Spread the cooked rice over as the next layer .
  26. Drizzle butter throughout the layer . Sprinkle cilantros .
  27. Now reserved masala and prawns layer .
  28. Again a rice layer . Drizzle butter again .
  29. Sprinkle cilantros .
  30. Cover and seal the pan tight . Cook for 10 minutes in low heat .
  31. Flavorful Baked Buttery Prawns Pulao is ready to serve .
  32. Serve hot .
