Ingredients Serving: 4
Prawns large 800 grams , shelled out , deveined , cleaned and drained
Ginger garlic paste 1 teaspoon +1 teaspoon
White pepper powder 3/4 teaspoon
Salt 1/2 teaspoon
Melted butter 1 teaspoon for marination
Butter 1 .5 tablespoon for greasing
Bread crumbs 1 cup
For Cooking rice :
Basmati rice 4 cups soaked for 20 minutes , drained
Water 3.5 cups
Butter 1 tablespoon
Salt 3/4 teaspoon
Other ingredients :
Bay leaves 4
Cloves 6
Cinnamon stick medium 2
Whole black pepper 2 teaspoons
Star anise 3
Green cardamom 7
Green chilies 4
Onion big sized 2 finely chopped
Garlic fat cloves 10 finely minced
Tomato big 1 finely chopped
Oil 2 tablespoons
Butter 6 tablespoons + 3 tablespoons
Garam Masala powder 1 teaspoon
Red chili powder 1/2 teaspoon
Salt as required
Mint leaves 1/2 cup
Cilantros 1 cup chopped
Instructions
Marinate prawns in a teaspoon of ginger garlic paste , 1/2 teaspoon salt , 1 teaspoon butter , white pepper powder for 15 minutes under refrigeration .
Grease a pan with 1.5 tablespoons butter .
Roll marinated prawns on bread crumbs spread on a plate . See every prawn is coated well .
Place the coated prawns on the butter greased pan .
Cover the pan and bake the prawns in low heat for 10 to 12 minutes . Do flip sides in between for even baking .
Don’t over bake . Golden colored prawns with bread crumbs roasted texture will do .
While prawn is getting baked , cook the rice with the ingredients listed under cooking rice section . Don’t over cook the rice .
Fluff the 80 % cooked rice immediately with a fork . Keep it aside .
Coming to the pulao , heat a wide heavy based pan .
Heat oil and 6 tablespoons butter.
Add bay leaves , cloves , cinnamon sticks, cardamom , star anise .
Add 1 teaspoon ginger garlic paste and green chilies .
Add minced garlic .
Sauté till raw smell leaves .
Add the onions and sauté till translucent .
Add remaining salt at this stage .
Add tomatoes and sauté until mushy .
Add Garam Masala powder .
Add red chili powder .
Add mint leaves and half of the cilantros .
Mix and cook until masala looks glossy .
Now add the baked butter prawns .
Toss gently . Reserve few Masala and prawns in a bowl .
Spread the prawns and masala as the first layer .
Spread the cooked rice over as the next layer .
Drizzle butter throughout the layer . Sprinkle cilantros .
Now reserved masala and prawns layer .
Again a rice layer . Drizzle butter again .
Sprinkle cilantros .
Cover and seal the pan tight . Cook for 10 minutes in low heat .
Flavorful Baked Buttery Prawns Pulao is ready to serve .
Serve hot .
