ABOUT Chocolate Prune Muffins RECIPE

I got a pack of prunes and I was desired to make something different using them. Though, I've never used or eaten prunes yet but still wanted to give it a try :p Got this lovely recipe from a friend, Suchit. Made a few changes as it was using eggs. And here I am with my eggless version. I am all happy :))

Ingredients Serving: 6

  1. 3/4 cup - all purpose flour/maida
  2. 1/2 cup - prunes finely chopped
  3. 1/2 cup - powdered sugar
  4. 1/2 cup - milk (or as reqd)
  5. 1/4 cup - oil
  6. 2 tbsp - cocoa powder
  7. 1 tsp - vanilla essence
  8. 1 tsp - vinegar
  9. 1/2 tsp - baking soda
  10. 1/4 tsp - coffee powder (optional)
  11. Handful of crushed almonds
  12. White chocolate chopped

Instructions

  1. Preheat oven at 180c.
  2. Mix the milk with vinegar. Keep aside.
  3. Sift together maida, cocoa powder, sugar, baking soda and coffee powder in a bowl. Combine well
  4. In another bowl, mix essence, oil and the milk-vinegar mixture. Combine well
  5. Add in the dry ingredients and fold gently to combine till no lumps are there.
  6. Add crushed almonds and prunes and mix gently.
  7. Grease a muffin tray or cups and spoon the batter equally.
  8. Garnish with chopped white chocolates and bake for 15-20 minutes or until done. Insert a tooth pick and check for doneness.
  9. When done, let it cool and serve warm with vanilla ice cream.
