ABOUT CUSCUZ DE SARDINHA RECIPE

This is a dish from the state of Bahia (Brazil) Corn meal is the main ingredient to which sardines or prawns are added for flavouring along with other ingredients like onion, garlic, tomato, palmito, eggs, olives, green peas, corn kernels, parsley and chilli sauce. Vegetarians can skip the prawns / sardines / eggs and just have any other veg garnishing like bell pepper / capsicum slices.

Ingredients Serving: 8

  1. Sardines 2 cans
  2. Onion 1
  3. Garlic 3-4 cloves
  4. Tomatoes 2
  5. Maggi cube 1
  6. Oregano 1 tsp
  7. Tomato paste 1 tbsp
  8. Parsley handful
  9. Corn meal .... 2 cups
  10. Boiled eggs 2 + 1 (one for garnishing)
  11. Palmito few pieces (pickled palm)
  12. Chilli sauce 1 tbsp
  13. Salt to taste
  14. Oil as needed.
  15. Olives few
  16. Boiled corn kernels - handful
  17. Boiled green peas handful

Instructions

  1. Heat oil in a pan and sauté the chopped onions and garlic.
  2. Add the chopped tomatoes and the maggi cube.
  3. Sauté until the tomatoes are cooked.
  4. Add about 3 and 1/2 to 4 cups of water.
  5. When it starts to boil add the salt, tomato paste, chilli sauce, sardines, palmito pieces, few olives chopped and boiled egg pieces.
  6. Stir carefully.
  7. Now add the corn meal and continue to stir until it reaches a thick creamy consistency.
  8. You can remove it in a serving dish and garnish with the sliced egg, olives, sardines and tomato slices.
