Ingredients Serving: 10

  1. Milk-2ltr
  2. Mango Pulp-1cup
  3. Lemon juice-1 full lemon
  4. Condensed milk-200 grams
  5. Rose water-1teaspoon
  6. Few saffron strands
  7. Warm milk-1 tablespoon (to soak saffron)

Instructions

  1. Method of making chena or paneer or cottage cheese
  2. Heat milk in a large heavy bottomed pan until just before it to boil,simmer the gas
  3. Add lemon juice and stir constantly the milk until it starts curdling
  4. Place a thin cloth or muslin cloth in a strainer and strain out the whey from curd.
  5. Rinse chena or paneer with cloth under the running water,it helps to remove the sourness of lemon juice from chena or paneer.
  6. Make a tight knot in the cloth and squeeze out any excess moisture ,hang it with kitchen sink tap for 2 hours.
  7. Method of making sandesh
  8. Soak saffron in warm milk
  9. Place a thick bottomed pan on stove on a low flame
  10. Add mango pulp and stirring for 2 minutes until it become light thick
  11. Add the chena dough mixture, and condensed milk ,with continues stirring until moisture would begin to dry up,remove the pan from heat and allow the mixture to cool
  12. Take a small portion of the mixture,knead it with your fingers and make shape like a ball then pressing the right side of the ball little down to give the perfect shape of mango.Put clove on the top.
  13. Your mango sandesh is ready..
