ABOUT New Orleans Jambalaya RECIPE

It's a creole dish of Spanish and French influence. It is believed to be originated from the Spanish Paella. But now it's one of America's famous rice dish.

Ingredients Serving: 4

  1. 3 cups cooked rice
  2. 200 gms Boneless Chicken cut into thin strips
  3. 200 gms Prawn de shelled
  4. 4-5 strips of bacon cut into small pieces
  5. 4-5 pcs Chicken sausages
  6. 1 onion chopped
  7. 1 tsp garlic finely chopped
  8. Red hot sauce acc to taste
  9. 1/4 tsp Worcestershire sauce
  10. 1/4 tsp dry mixed herbs
  11. Green onions
  12. Bell peppers cut into small cubes
  13. Créole Seasoning
  14. 2 tsp garlic pwd
  15. 2 tsp sweet paprika pwd
  16. 11/2 tspn dried thyme
  17. 1 tsp oregano
  18. 1 tsp dried basil
  19. 3/4 tsp Salt
  20. 1/2 tsp black pepper powder
  21. 1 chicken stock cube
  22. Chilli flakes

Instructions

  1. Make a powder of all the ingredients listed under creole seasoning and keep aside.
  2. Marinate all the meats with the creole seasoning separately and keep aside for half an hour
  3. Heat oil in a wok and add chopped garlic and onions. Sauté till onions become soft.
  4. Add the marinated chicken, then prawns, sausages , bacon. Add the bell peppers. Then add all the sauces and rice.
  5. Mix everything well. Add salt and pepper. Lastly add the herb mix and some more creole spice pwd.
  6. Remove and serve with a garnish of green onions.
