Ingredients Serving: 3

  1. For Fish Makhani :
  2. Fish fillets 400 grams
  3. Tomato purée 1 .5 cup
  4. Cumin powder 1/2 teaspoon
  5. Red chili powder 2 teaspoons
  6. Ginger paste 1 teaspoon
  7. Garlic paste 1 teaspoon
  8. Turmeric 1 teaspoon
  9. Butter 1/2 cup
  10. Fresh cream 3 tablespoons
  11. Garam Masala 1.5 teaspoon
  12. Fresh coriander leaves finely chopped a fistful
  13. Water 1 /2 cup
  14. For the crescent ring bread :
  15. Wheat flour 1 cup
  16. Instant dry yeast 1 tablespoon
  17. Warm milk 1/4 cup
  18. Soft butter 1/4 cup
  19. Salt 1 teaspoon
  20. Sugar 1.5 teaspoon
  21. Grated paneer 2 tablespoons
  22. Dried thyme 2 teaspoons or as preferred
  23. Cream cheese 1/4 cup or as preferred
  24. White pepper powder for sprinkling
  25. Egg 1 for egg wash

Instructions

  1. In a small bowl , take 3 tablespoons warm milk .
  2. Add a teaspoon of instant dry yeast , sugar . Mix and set aside till the milk turns frothy .
  3. In a wide bowl , take wheat flour .
  4. Add salt to the flour .
  5. Mix. Combine flour and salt .
  6. Add 4 tablespoons butter . Reserve the rest for later use .
  7. Mix butter and flour together . See butter is combined evenly .
  8. Now add the yeast sugar mixed milk .
  9. Combine all . Knead together .
  10. Add warm milk gradually and knead .
  11. Knead the dough for about 10 to 15 minutes in standard front and back kneading style .
  12. Cover and rest the smooth dough for about 2 hours . Keep the dough in some warm place for better activation .
  13. The dough includes fat and so yeast activation delays . The warmer the place , the sooner the dough rises .
  14. Meantime , let’s prepare fish Makhani.
  15. Take fish fillets in a container .
  16. Add 1/2 teaspoon salt .
  17. Add 1/2 teaspoon turmeric powder .
  18. Add cumin powder .
  19. Marinate fish fillets for 5 to 10 minutes .
  20. Steam the marinated fish fillets to soften the fish . Needn’t cook the fish completely . Par cooking will do .
  21. Shred the steamed fish fillets . Keep aside.
  22. Melt 1/2 cup butter in a wide pan .
  23. Immediately add ginger paste .
  24. Add garlic paste .
  25. Sauté quickly .
  26. Add the tomato purée .
  27. Sauté till red and cooked .
  28. Add remaining turmeric powder .
  29. Add red chilli powder .
  30. Add Garam Masala powder .
  31. Sauté masala till it releases butter at the sides .
  32. Add the shredded fish .
  33. Add required salt .
  34. Add water to adjust consistency .
  35. Cover and cook for 3 minutes till the fish is done .
  36. In high heat , adjust consistency . We don’t want a gravy now and we need a tighter version .
  37. So cook till there is no water . Simmer the flame .
  38. Finally add cream . Toss the fish . Remove from the heat .
  39. Garnish with coriander leaves .
  40. Our yeast dough has doubled in size with a super soft texture .
  41. Transfer the dough to the kitchen counter , and knead again for 5 minutes with butter greased palms .
  42. Divide the dough into 2 equal portions which will give 2 medium sized crescent ring breads .
  43. Take one dough portion .
  44. Roll the dough into a large thin round sheet . Cut the sheet into triangles
  45. Now arrange the triangles like sun on a parchment lined baking tray .
  46. Now take the required fish Makhani . Add grated paneer to it . Mix .
  47. Spread butter on the centre of the ring ( dough ) .
  48. Next spread the fish Makhani as one layer as shown.
  49. Spread cream cheese as one layer .
  50. Sprinkle white pepper powder .
  51. Now pull each triangle ends and tuck it inside the ring .
  52. Some portion of the filling will be visible in this crescent rings . Tats completely fine .
  53. Egg wash the ring .
  54. Sprinkle Dried thyme on the ring .
  55. Place the tray inside a preheated wok . Preheating time 5 minutes high .
  56. Cover and bake for 20 to 25 minutes in medium heat till golden .
  57. Repeat steps for the remaining bread dough .
  58. Fish Makhani Crescent ring breads are ready .
