ABOUT Shrimp and Pineapple Summer Salad RECIPE

Jumbo shrimp with pineapple is a sweet and spicy combination you will love. Entire cooking plus prep time should take you no more than 20 minutes. Seriously can minimal cooking get any better than this!

Ingredients Serving: 2

  1. Pineapple diced -1/2 of 1
  2. Shrimp - 12 -15 jumbo, peeled and cleaned
  3. Pepper and salt to marinate shrimp
  4. Paprika powder -1/2 tsp
  5. Cucumber-1
  6. Onion -1
  7. Iceberg lettuce -1/ of 1
  8. Toasted sesame seeds - 1-2 tsp
  9. Olive oil - 2 tsp
  10. Dressing
  11. Mayonnaise - 2 tsp
  12. Siracha - 2 tsp
  13. Olive Oil - 1 tsp
  14. Salt and pepper to taste

Instructions

  1. Marinate shrimp with salt and pepper and keep it aside for 10- 20 minutes Mix the dressing and keep it refrigerated
  2. Dice the pineapple into bite size pieces.Cut the onion and cucumber into thin juliennes with the mandolin slicer. Keep these refrigerated until ready to serve.
  3. Fry the shrimp in two tsps for 2-3 minutes on each side until cooked. Sprinkle paprika powder on top. Break the lettuce into large chuck pieces.
  4. When salad is ready to be served begin assembling by tossing the pineapple and veggies into the dressing, mix well.
  5. On the serving platter spread the lettuce leaves first then put the veggies and pineapple coated with dressing then the shrimp on top. Sprinkle the toasted sesame seeds on top.
  6. Serve along with instant cook couscous or any health food like quinoa ,wild black rice etc.

lovely picture..i am going to try it super soon! What would be a substitute if siracha is not available?
