Heat 1 tbsp butter in a pan.
Prick boiled eggs with fork few times. Roast them until golden. Set these aside ￼
Next add onion, ginger, garlic, tomato, cashews and salt. Saute on a high to medium flame until tomatoes turn soft and mushy.
Cool and add to a blender jar with 2-3 tbsp water. Blend to a smooth puree.
Add another 1 tbsp tbsp butter and add cumin seeds. Wait for few seconds.
Now add red chilli powder and turmeric powder. Fry on low flame until the raw smell of the chili and turmeric powder goes away.
Pour the puree, coriander powder, garam masala powder and sugar.
Cover and cook till oil separates.
Add 1 cup luke warm water and salt as needed to bring it to a consistency.
Now add fried eggs, cover and cook for 2-3 minutes on low heat.
After a while the gravy thickens. Add fresh cream and cook for a while.
Sprinkle kasuri methi and cook coverd for another 30 seconds.
Turn off the heat and add 1/2 tbsp butter.
