This is my favourite recipe! My mom taught me how to make this raw mango pickle at home.

Mom's Special achaar

Ingredients to make Mom's Special achaar

  • Kairi 5kg
  • fenugreek seed 50 gms
  • Fried mustard seed 500gms
  • Fried fennel seed 250gms
  • coriander powder 100 gms
  • red chilli powder 100gms
  • Fried garlic 1cup
  • Fried pepper corn 25gms
  • Fried (Cloves cinnamon cardamon ) 25gm
  • Fried asafoetida powder 3 tbs
  • Oil (peanut oil )for frying
  • salt as per taste
  • turmeric powder 100gms

How to make Mom's Special achaar

  1. Wash kairi and add turmeric powder and salt mixs it well and keep it aside for 5 hours
  2. After 5 hours rinse salt and turmeric water
  3. In a big heavy bottom.pan heat oil when it get hot keep aside let it bs kool After cooling add red chilli powder mixs it well and keep aside
  4. Except this oil add all the ingredient in kairi mixs it well
  5. At the last add oil which we already prepared by adding red chilli powder
  6. Mixs it also For additional taste you can also add readymade pack of acchar masala which is also give a delicious taste for 5 kg you add 2 pack of rambhandhu achar masala .
  7. Put this in a air tight jaar
  8. For preparing achar longer time add enough salt and oil and stir it at interval of 15 days

My Tip:

Keep the achaar in a shady place. Avoid putting it in direct sunlight.
