Veggiestrone is a perfect meal/ brunch dish for anytime of the day. Loaded with veggies and beans makes it unique, tasty and standout, than any other soup. A clever way to feed your kids who are fussy to eat veggies and beans. Tasty and appetizing. I usually never like soups that much but to my wonder I started with one and ended up having three bowls of it. Lol!! Without any added sauces n flavors , this turns out to be a tasty treat to the palette and eyes as well , with the lovely colors of veggies and beans. Perfect guilt free meal to kick start your day. Ingredients Serving: 8

  1. 1/4 cup : onions chopped
  2. 1/3 cup : Carrots peeled and chopped
  3. 1/4 cup : Zucchini chopped
  4. 1/4 cup : Bell peppers chopped
  5. 1 large : Tomato chopped
  6. 5 to 6 large  : Mushrooms chopped
  7. 1/2 cup : thinly shredded cabbage
  8. 4 nos : Garlic cloves crushed
  9. 3 tbsp : Thick Tomato paste
  10. 1 can / 1 Cup : Red kidney beans
  11. 1 tbsp : Olive oil
  12. 1 tsp : Pepper powder
  13. 1 tsp : Salt
  14. 1 tbsp : Red chilli flakes
  15. 1 tsp : Mixed Italian herbs
  16. Few fresh Basil leaves chopped
  17. 800 ml : Vegetable / Chicken stock ( Or 1 stock cube diluted according to package instructions ..I used Maggi stock cube )
  18. 1 tbsp : Corn starch mixed without lumps in 1/4 cup of water...

Instructions

  1. In a deep pan add olive oil, once hot add the crushed garlic and saute for a minute or two until golden and fragrant. Later add the chopped onions and cook until soft.
  2. Next add the chopped veggies i.e. Tomato , peppers, zucchini, mushrooms, carrots. Stir and add the salt, mix well again and cook until veggies turn soft yet slightly with a crunch.
  3. Later add the tomato puree and cook for couple of minutes. Now add the chilli flakes , italian herbs n stir well.
  4. Saute for a minute or so, later add the vegetable / chicken stock. Now bring this to a vigourous boil covering with a lid.
  5. Next add the cooked kidney beans and shredded cabbage. Bring this boil once again n keep cooking until cabbage turns soft and raw smell is gone. Now stir in the corn starch water, pepper powder and chopped basil leaves. Check and adjust seasoning.
  6. Stir well and bring this to a boil. Now the Veggie loaded soup is ready to serve hot.
  7. Tastes and smells heavenly, we had it for our breakfast today along with some toasted garlic baguette. Yum Yum! we loved it to the core. Make and enjoy with your family and friends. Taste bhi Health bhi, what a perfect balance!!
