ABOUT Dutch Butter Cake( Boterkoek) RECIPE

I am a novice baker. But once you start baking or follow any of your passion you just go nuts about it. When I saw the contest and the ingredient to be the butter , the first thought in my mind was that it has to be something different. It has to be a new addition in my cooking skills as well as in my cookbook. And the search begins, then I came to know about this very tempting Dutch Butter cake. This cake is aIl about butter, the butter added in this recipe should be of good quality. Original recipe uses European butter but I am using normal butter. It’s a very soft crunchy, buttery cake with the texture of a cookie and a very nice Dutch treat to indulge in , easy and quick to make.

Ingredients Serving: 10

  1. Maida/ All purpose Flour - 1 cup
  2. Unsalted melted Butter - 1 whole Stick (1/2cup)
  3. dark Brown Sugar - 2 +1/2 tablespoon
  4. Maple Syrup - 1 tablespoon
  5. Chopped Almonds - 1/4 cup
  6. Almond extract - 1 tspn
  7. Salt- 1/4tspn

Instructions

  1. 1.Preheat oven to 350 degrees F. Grease 9x7 baking dish.
  2. 2. Melt the butter and mix it with the flour, dark brown sugar, maple syrup and salt until just combined. Don’t overmix it.
  3. 3. Now add half of the Chopped Almonds, Almond extract into the batter and mix it well for few seconds only.
  4. 4. Pour the prepared batter into 9x7 greased baking pan. Gently press to evenly distribute the mixture and even the surface.
  5. 5 .Bake at 350 F for 30 minutes until the edges just start to turn golden. The middle will still VERY gooey, but the cake is definitely done at this point.
  6. 5. Allow to cool completely before removing from pan. Garnish the cake with rest of the half Chopped Almonds, some chocolate sauce and cut into squares. Enjoy!
