ABOUT Puff Pastry Recipe With Butter RECIPE

Making puff pastry sheets from scratch at home needs a lot of patience and effort. Temperature and technique play a vital role in making these sheets. The puff pastry sheets must be kept at a temperature of approximately 16 °C. This temperature avoids the butter from becoming runny. Puff pastry recipe is famous all over the world and is an extremely popular breakfast recipe. The first known recipe of puff pastry with butter appeared in a Spanish recipe book “Libro del arte de cozina” published in 1607.

Ingredients Serving: 6

  1. 500 gm All Purpose Flour (For Pastry sheet)
  2. 400 gm Butter Unsalted (For pastry sheet)
  3. 1 1/2 tsp salt (For pastry sheet)
  4. 240 ml Ice cold water ( For pastry sheet)
  5. 1 tbs Lemon juice (For pastry sheet)
  6. 1 cup Potatoes Boiled Mashed (For Stuffing)
  7. 1/4 cup Peas Boiled (For Stuffing)
  8. 1 tsp Cumin Seeds (For Stuffing)
  9. 1 tsp Salt (For Stuffing)
  10. 1/2 tsp Red Chilli Powder (For Stuffing)
  11. 1/2 tsp Green Chilli Chopped (For Stuffing)
  12. 1/2 tsp Mango Powder (For Stuffing)
  13. 2 tbs Oil (For Stuffing)

Instructions

  1. In a bowl mix flour, lemon juice, and salt. Add ice cold water and start kneading the dough. The dough should be firm. Cover the dough and rest it for 20 minutes.
  2. On the other hand, shape the butter into a 6”x3” rectangular block. Cover it and keep it in the refrigerator.
  3. After 20 minutes of resting time roll the dough into a 10”x6” rectangle.
  4. Place the prepared butter block in the center and fold both the corners towards the center. Cover the dough and keep it in the refrigerator for 20 minutes.
  5. After 20 minutes, take the dough out on a lightly floured surface and using a rolling pin roll it again into a 12”x6” rectangle.
  6. Fold one side till the center. Now fold the other side and overlap it on the first side.
  7. Cover it with cling wrap and refrigerate for 20 minutes.
  8. Repeat this step three more times,
  9. For the final fold, take the dough on lightly dusted surface. Start rolling the dough into 12”x6” rectangle.
  10. Pull both sides together towards the center, however, do not overlap them. Overlap the two folded sides over each other to form a book.
  11. Cover it with cling wrap and store in the freezer.
  12. For stuffing, Heat a pan. Add oil to it. Add cumin seeds and sauté for 1 min. Add mashed boiled potatoes, Peas and all the dry spices.
  13. Cook for 5 minutes and switch off the flame. Transfer the prepared stuffing to a bowl and let it come to room temperature.
  14. Take the laminated puff pastry sheet from freezer and thaw it.
  15. Cut it into desired shape, stuff and rest these in the refrigerator for 10 min.
  16. Preheat the oven to 160°C and bake the stuffed pastry sheets in a preheated oven for 20 minutes.
  17. When baked, serve hot with your choice of sauce.
