Amazing Cheesy Nachos

Ingredients to make Amazing Cheesy Nachos

  • For Nacho Chips:
  • 1 cup maize/corn flour or yellow makki ka atta
  • 1/4 cup wheat flour
  • 1 tbsp salt
  • 1 tbsp roasted cumin powder (optional)
  • oil for frying
  • water as required
  • For the Cheese Sauce:
  • 2 tbsp butter
  • 2 tbsp maida
  • 1 1/4 cups milk, heated
  • 1/2 cup sharp white cheddar cheese, shredded
  • 2 amul cheese cubes
  • salt, to taste
  • Freshly ground black pepper
  • A pinch of cayenne pepper

How to make Amazing Cheesy Nachos

  1. Making Nacho Chips:
  2. In a bowl, combine maize flour, wheat flour, salt and cumin powder. Mix well.
  3. Add some water and knead into a fine dough.
  4. Roll out dough using butter paper.
  5. Cut into pieces using a knife or a cookie cutter.
  6. Prick holes using a fork.
  7. Fry in hot oil, pressing downwards.
  8. Drain and set aside.
  9. Making Cheese Sauce:
  10. Melt the butter in a heavy-bottomed saucepan.
  11. Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles around the edges.
  12. Add the hot milk, continuing to stir as the sauce thickens. Bring it to a boil. Once the milk has reached a boil, quickly lower the heat and reduce to a simmer. Allow the sauce to thicken slightly.
  13. Add salt, black pepper and a pinch of cayenne, pepper and whisk to combine.
  14. Add the cheddar cheese and gently stir, allowing the cheese to melt. Turn heat to low and stir until cheese is completely melted and the sauce is smooth. Keep on low heat until ready to serve.
  15. Assemble:
  16. Add a layer of nacho chips onto a plate. Spoon cheese sauce and top with grated amul cheese.

My Tip:

You can use any cheese stored in your pantry. Use good, real cheese! Get a block and grate it yourself. Do not go for the pre-shredded stuff in the bags. It makes a world of difference, guys. Trust me! Experiment with your favorite cheeses to see what you like best. If cheese sauce becomes too thick, add milk as necessary to thin. Serve on individual plates or family-style on a large platter.
