Ingredients Serving: 3

  1. Large eggs 4
  2. Onions medium sized 2 ground to a paste .
  3. Tomatoes 3 big boiled and grated to purée
  4. Ginger garlic paste 3/4 teaspoon
  5. Sesame seeds white 1 teaspoon
  6. Green cardamom 2
  7. Unsalted butter 2 tablespoons
  8. Oil 1 tablespoon
  9. Turmeric powder 3/4 teaspoon
  10. Kashmiri red chilli powder 1 teaspoon
  11. Garam masala powder 3/4 teaspoon
  12. Coriander powder 1/2 teaspoon
  13. Salt 2 + 1/2 teaspoons or preferred
  14. Pepper powder 1 /2 teaspoon
  15. Kasuri Methi / dried fenugreek leaves crushed 1 tablespoon
  16. Fresh cream 4 tablespoons
  17. Cashew paste 1 tablespoon
  18. Cilantros finely chopped for garnishing

Instructions

  1. Heat oil in a pan .
  2. Add butter reserving a tablespoon for last .
  3. Add green cardamom .
  4. Add the onion paste . Sauté until raw smell leaves .
  5. Add turmeric powder .
  6. Add red chilli powder .
  7. Sauté and cook for 2 minutes .
  8. Add 1.5 teaspoon salt .
  9. Pour in the tomato purée and mix well .
  10. Cover and cook the gravy for 5 minutes .
  11. Add coriander powder and garam masala powder . Mix .
  12. Add cashew paste .
  13. Simmer the flame and cook in low .
  14. Meantime , in a bowl , take whisked eggs .
  15. Add 3/4 teaspoon salt .
  16. Add red chilli powder pinch and pepper powder .
  17. Add few chopped cilantros .
  18. Whisk all together .
  19. Take a greased deep small cake / loaf tin / tiffin box .
  20. Pour in this egg mixture .
  21. Cover and bake .
  22. Bake the eggs in a butter greased deep small pan . Cover and bake for 5 to 7 minutes in low till egg raises like bed
  23. Cut the baked eggs into squares .
  24. Drop the egg squares in the curry .
  25. Add Kasuri Methi .
  26. Toss gently so that egg gets the masalas , combines well in the curry .
  27. Slow cook till curry achieves the required creamy consistency .
  28. Add in the fresh cream .
  29. Drizzle butter . Toss gently .
  30. Remove from the heat .
  31. Garnish with chopped cilantros .
  32. Egg Makhani is ready to serve .
  33. Serve hot .
