ABOUT Blueberry- Lemon Muffins RECIPE

Its a blueberry lemon muffin with a lemon crunch top, perfect for breakfast or tea time

Ingredients Serving: 6

  1. Flour - 250gm
  2. caster Sugar - 100gm
  3. Butter - 120 gm
  4. Eggs - 2 large
  5. Baking powder - 11/2 teaspoon
  6. Blueberries - 150gm / A handful
  7. Lemon juice - 2 tablespoons
  8. Lemon zest - 1 teaspoon
  9. Lemon Crunch:
  10. Lemon zest - 1 teaspoon
  11. Granulated Sugar - 50gm

Instructions

  1. Preheat the oven to 180 degrees celsius. Line the muffin tin with liners.
  2. In a large bowl, cream the butter and caster sugar until pale and fluffy. Add and beat one egg at a time.
  3. Add the buttermilk, lemon juice and lemon zest.
  4. Sift in the flour and baking powder. Mix thoroughly. Fold in the blueberries.
  5. Scoop 2 ice cream scoops of batter in the liners.
  6. Mix the granulated sugar and lemon zest, sprinkle this mixture on the batter.
  7. Bake for about 30 minutes. Check to see if completely baked from about 25 minutes.
