ABOUT Watermelon Curry RECIPE

This is a curry that can be a perfect example to the fact that spices do not mean heat but flavour. The cumin, carom seeds, nigella seeds and dried chillies release all its flavour into the oil and cuts into the sweetness of the melon pieces. The soft rind of the watermelon adds just the right amount of bite and texture to an otherwise soft dish.

Ingredients Serving: 4

  1. 1 kg seedless Watermelon with rind
  2. 3 dried Red chillies broken into small pieces
  3. 4 cloves Garlic finely chopped
  4. 2 tbsp vegetable Oil
  5. 2 tsp fresh Coriander leaves finely chopped
  6. ½ tsp Ajwain/Carom seeds
  7. ½ tsp Cumin seeds
  8. ½ tsp Nigella seeds (black onion seeds)
  9. ĵ tsp Turmeric powder
  10. Salt to season

Instructions

  1. Carefully cut the outer dark green layer of watermelon rind by keeping the inner whitish-green rind intact. Now remove the red flesh from whitish rind.
  2. Take a pan and add oil. When it heats up add ajwain, cumin, nigella seeds and dry red chilies. Fry till fragrant and add garlic. Saute on medium heat for 30 seconds.
  3. Now add whitish watermelon rind along with turmeric powder. Cook covered for 6-7 minutes until the rind turns brown and soft.
  4. Pulse half the watermelon flesh and set aside.
  5. Nearly after 7 minutes, add above pulsed watermelon pulp along with ½ cup water. Stir to combine and season with salt. Cook covered until rind turns tender.
  6. Cook on high for 3-4 minutes by adding remaining flesh pieces. Serve warm by garnishing with chopped coriander leaves.
