Ingredients Serving: 2

  1. 1/2 cup gram flour
  2. 1 cup sour buttermilk
  3. 1/4 tsp turmeric
  4. Salt to taste
  5. For tempering
  6. 2 tbsp oil
  7. 2 green chillies cut into slits
  8. 4-5 curry leaves
  9. 1 tsp mustard seeds
  10. 1/2 tsp cumin
  11. 1/2 tsp sesame seeds
  12. 1 tsp sugar
  13. 1 tbsp water
  14. Pinch of hing
  15. Fresh corriender leaves

Instructions

  1. In a mixing bowl add gram flour, buttermilk , turmeric and salt and mix them together to make a lump free batter
  2. Now heat a wok and add this mixture into it
  3. Cook on slow heat with continue stirring, so lumps cannot be formed
  4. It takes around 8-10 minutes to become thick
  5. To check the consistancy take small amount of mixture with a spoon and spread on a greased surface and let it cool for a minute
  6. If it is easy to make roll and dosent stick on the surface, then its done
  7. Now switch off the flame and spread the mixture evenly on a greased surface and let it cool for few minutes
  8. Make the cuts into strips with help of a knife and start rolling
  9. Make all the rolls in same manner and collect into a plate
  10. Now prepare temper by adding mustard seeds, cumin, green chillies, sesame seeds, curry leaves and hing in hot oil
  11. Add 1 tbsp water and s spoon sugar into it
  12. Add little salt and let the temper cool
  13. Pour the temper on khanvi and garnish with fresh corriender leaves
