Today's recipe is Mesu/Gur_Gatta/HoneyComb_Candy ... May be we all known it by gur gatta name .. it's very old and familier recipe... I used to have it outside my school in my school time . I was crazy about it ... But in these days almost everyone forgotten it .. may be due to more and more new eatables .... Let's remember our old memories with this dish ...

Ingredients Serving: 5

  1. Jaggery 250 gram
  2. Clarified butter/desi ghee 2 tbspn
  3. Water 1 tbspn
  4. Baking soda 1 tspn
  5. Eno 1/4 tspn
  6. Roasted peanuts 2 tbspn
  7. Fennel seeds 1 tspn
  8. Melon seeds 1 tspn

Instructions

  1. Firstly grease the plate then start making.
  2. Heat a heavy bottom pan and melt half ghee and add 1 tspn water.
  3. Now add Jaggery, cook on medium flame until Jaggery melts .. Stir continuously otherwise Jaggery will stick to pan .
  4. When it starts bubbling then cook on low flame for some time.
  5. For checking put few drops of melted Jaggery into water. And break , If it becomes crunchy then it is ready if it is not crunchy then cook some more time and check again .
  6. Cook until it becomes crunchy , check again and again by putting few drops into water .
  7. When Jaggary becomes crunchy then turn off the gass and add rest of ghee and mix well .
  8. Now add baking soda and eno and mix quickly. It become fluffy.
  9. Immediately transfer into greased mould/plate . Don't tap or stir after transfer into the plate otherwise it's air bubbles will be lost.
  10. Garnish with fennel seeds, Magaz and peanuts .
  11. Keep aside at least 2 hours then demould and break the gur gatta slab .
  12. Result u can see . It's look like honeycomb. So its name become honeycomb candy .. Tooo delicious
