ABOUT Pakhala RECIPE

Pakhaḷa is an Odia term for an Indian food consisting of cooked rice washed or little fermented in water. The liquid part is known as toraṇi. It is popular in Odisha, Bengal, Assam, Jharkhand, Chhattisgarh, and Tamil Nadu.

Ingredients Serving: 2

  1. 1 cup rice
  2. 1/2 cup curd
  3. 1 tsp mustard seeds
  4. 1/2 tsp Refined oil
  5. 1/2 tsp finely chopped ginger
  6. 1 bunch curry leaves
  7. 2 Vertically sliced green chilli
  8. 5-6 Chilled water/Ice cubes (optional)
  9. To taste Salt

Instructions

  1. First cook the rice,add some water,leave it for 3-4 hours or whole night(If u want to prepare instantly then after cook the rice,add some chill water).
  2. Heat oil in a pan,add mustard seeds,let it crackle,add chopped ginger,curry leaves,sliced green chilli.
  3. Then add water rice(pakhala) into it,switch off the flame,then add curd,salt into it,stir well.
  4. Let it cool before u eat or u can add ice cube/chilled water into it. Odisha famous pakhal(ପଖାଳ) is ready to serve.
  5. Serve it with dahi,saga,baigani,ghanta.
