ABOUT DHANIWAL KORMA / KASHMIRI LAMB CORIANDER KORMA RECIPE

Dhaniwal Korma is a flavourful lamb curry from Kashmir. It has a rich and creamy gravy with nut paste and flavoured with spices and saffron. You can relish it with Khamiri roti or Kashmiri pulao.

Ingredients Serving: 3

  1. Mutton ............ 500 gms
  2. Cloves ........... 3-4
  3. Green cardamoms .. 4
  4. Fried onion paste ... 3 tbsps
  5. Garlic paste ............. 1 tsp
  6. Turmeric powder ...... 1/2 tsp
  7. Coriander powder ...... 2 tsps
  8. Kashmiri chilli powder .. 1/2 tsp
  9. Garam masala powder ... 1 tsp
  10. Saffron ...................... 2 pinches
  11. Cashew nuts ............. handful
  12. Yogurt ...................... 1/2 cup
  13. Milk ....................... 2-3 tbsps (to soak saffron)
  14. Coriander leaves ...... 1/2 cup
  15. Salt ....................... to taste
  16. Oil or Ghee ........... 6-7 tbsps.

Instructions

  1. Heat oil in a pressure cooker and add the cardamoms and cloves.
  2. Tip in the meat and saute for few minutes.
  3. Add 1 cup water, little salt and close the cooker. Cook for 7-8 whistles or until the meat is almost done.
  4. Now add the spice powders and the fried onion paste. Add 1 cup water.
  5. When it starts to boil reduce the flame.
  6. Stir in the cashew nut paste or powder. Stir to mix.
  7. Next stir in the whisked yogurt.
  8. Add the saffron infused milk and check the salt.
  9. Finally tip in the coriander leaves. Simmer for half a minute. Now the korma is ready to be served.
