Vegetable Tian

Ingredients to make Vegetable Tian

  • 1 green Zucchini, sliced
  • 1 yellow Zucchini, sliced
  • 1 Eggplant (Japanese), sliced
  • 2 tomatoes, sliced
  • 2 potatoes, sliced
  • 2 onions, chopped
  • 3-4 garlic cloves, minced
  • 2-3 fresh Thyme or Marjoram sprigs (or use 2 teaspoon dried herbs)
  • 2 teaspoon freshly crushed black pepper
  • 1 tablespoon butter
  • 2 tablespoon olive oil
  • ¼ cup (or as required) shredded cheese (Gruyere or Cheddar)
  • 1 tablespoon fresh bread crumbs
  • salt to taste

How to make Vegetable Tian

  1. Pre-heat the oven to 190 deg Celsius.
  2. Grease a 6 inch baking dish/casserole
  3. In a small pan heat the butter.
  4. Add the onions and garlic and sauté for 2-3 minutes.
  5. Sprinkle a pinch of salt and pepper and mix.
  6. Take off the heat and spread the onions at the base of the baking dish.
  7. Arrange the vegetables alternately, in a single layer on the onions, till the dish is fully covered.
  8. Sprinkle salt, pepper and herbs.
  9. Drizzle the oil over the vegetables and bake covered with aluminium foil for about 20 minutes or till the potatoes are just soft.
  10. Add the breadcrumbs and cheese. Bake uncovered for 12-15 minutes more or till the cheese melts/turns golden.
  11. Serve hot.

My Tip:

Slice vegetables uniformly (about 1/8 inches). Also use slices (vegetables) of similar diameter so that it is easy to layer them.
