Whenever you go any gujratis home...u will definetely need to have breakfast,lunch or dinner with doklas in their menu...there are various types of doklas but today..i will describe you about vaati chana daal dokla where daal is soaked and then grinded and fermented rather than other ones whuch are made from ready to use gram flour..

Ingredients Serving: 4

  1. chana daal(bengal gram daal) 2 cups
  2. curd 2 tsp
  3. Eno 2 tsp
  4. oil 2 tbsp
  5. Mustard seeds 1 tsp
  6. cumin seeds 1 tsp
  7. Green chilli paste 2 tsp
  8. Slit green chillies 4
  9. Sesame seeds 2 tsp
  10. Curry leaves 10
  11. salt to taste
  12. mint 1 cup
  13. coriander 2 cups
  14. lemon juice 2 tsp
  15. Bhujiya sev 1 tbsp
  16. tomato ketchup 2 tbsp


  1. Firstly soak bengal gram daal for 8 hrs in a container....
  2. Wash the daal properly and grind into paste by adding 2 tsp curd.. allow the mixture to ferment for 8 hrs
  3. Now add turmeric,green chilli paste,salt to the batter and mix well... Grease the idli mould with oil and keep it ready.. On the gas of steamer with water at the bas and keep it ready
  4. Now add 2 tsp eno(fruit salt) to the batter and mix evenly in one direction ..Pour ladleful of batter in each moulds of idli and transfer it to the steamer ...Steam for 15 min
  5. You will notice that doklas in idli moulds are fluffy and spongy..Once cooled...scoope the center of doklas with spoon to 1/4inch depth and keep aside
  6. Heat 2 tsp oil in a pan,add mustard seeds,cumin seeds and wait till they crackle..Now add slit green chillies ,curry leaves,sesame seeds and cook for 2 min..And spread the tadka on the doklas
  7. Prepare chutney by grinding mint,coriander,bhujiya sev,lemon juice,salt ...
  8. Pour 1/2 tsp of chutney on each scooped doklas ...Drop little tomato ketchup on doklas..Serve it beautifully..
