About Kari Dosai: Recipe

One of the most popular and traditional food of Madurai district in tamilnadu.Its usually cooked in traditional way.Usually this type of dosa prepared in two steps:1.Mutton chukka 2.Egg mixture.

Kari Dosai:

Ingredients to make Kari Dosai:

  • Ingredients:
  • 1.To prepare Chukka:
  • To Grind:
  • 1/4 inch piece of cinnamon
  • 2 cloves
  • 2 cardamom
  • 1 star anise
  • Small piece of kalpasi(black stone flower)
  • 1 tsp poppy seeds
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 2 tbsp water
  • To pressure Cook:
  • 2 tbsp oil
  • 1 tbsp coconut oil
  • salt as required
  • 1/2 tsp fennel seeds
  • 1/2 tbsp ginger paste
  • 1/2 tbsp garlic paste
  • 1 tbsp cashews
  • 250 g mutton
  • Grinded paste
  • 1 1/2 cups water
  • To sauté:
  • Pressure cooked mutton pieces
  • 1/2 tsp turmeric powder
  • 2 tsp red chilly powder
  • 1/2 tbsp pepper powder
  • 1 tsp cumin powder
  • 1 tbsp coconut oil
  • 1/2 tbsp Chopped mint leaves
  • 1/2 tbsp chopped coriander leaves
  • 2.egg mixture:
  • 4 eggs
  • 4 tbsp chopped onion
  • Mutton chukka
  • 1 tsp pepper powder
  • 1/2 tsp salt
  • Chopped coriander leaves
  • 3 cups dosa batter
  • 1 1/2 tbsp oil

How to make Kari Dosai:

  1. 1.Mutton Chukka:
  2. Grind the ingredients mentioned under ‘To Grind’ to a fine paste.
  3. Heat oil in a cooker,add fennel seeds.Let it splutter.Then add ginger paste,garlic paste and sauté until raw smell vanishes.
  4. Then add in the grinded paste and sauté for a minute.Then add in cashews,1 tbsp coconut oil,salt and mutton pieces.Saute until masalas well coated to a mutton pieces.Add in the water
  5. Pressure cook for 6 whistles in medium high flame.
  6. Transfer the pressure cooked mutton mixture to a pan and sauté for a min.Then add in the turmeric powder,red chily powder,pepper powder and cumin powder.Saute until Oil gets separated from the masalas and it should be dry.
  7. Finally add tbsp of coconut oil,mint leaves and coriander leaves.Saute for 2 mins and switch off the stove.
  8. 2.Egg mixture:
  9. In a bowl,add 1 egg,1 tbsp chopped onion,1/8 tsp salt,1/4 tsp pepper,2 tbsp mutton chukka and pinch of salt,Few corainder leaves and beat well.
  10. Heat a dosa tawa,pour a paddle of batter and spread lightly and cook for few secs.Then fadd egg mixture and spread it on the tawa.Drizzle some oil on the dosa and cook for a 2 mins in medium flame.
  11. Flip the dosa and cook for another 2 mins and switch off the stove.Serve hot with mutton kuzhambu.
  12. Repeat the above 3 steps for remaining batter.
