One of the most popular and traditional food of Madurai district in tamilnadu.Its usually cooked in traditional way.Usually this type of dosa prepared in two steps:1.Mutton chukka 2.Egg mixture.

Ingredients Serving: 2

  1. Ingredients:
  2. 1.To prepare Chukka:
  3. To Grind:
  4. 1/4 inch piece of cinnamon
  5. 2 cloves
  6. 2 cardamom
  7. 1 star anise
  8. Small piece of kalpasi(black stone flower)
  9. 1 tsp poppy seeds
  10. 1 tsp fennel seeds
  11. 1 tsp cumin seeds
  12. 2 tbsp water
  13. To pressure Cook:
  14. 2 tbsp oil
  15. 1 tbsp coconut oil
  16. salt as required
  17. 1/2 tsp fennel seeds
  18. 1/2 tbsp ginger paste
  19. 1/2 tbsp garlic paste
  20. 1 tbsp cashews
  21. 250 g mutton
  22. Grinded paste
  23. 1 1/2 cups water
  24. To sauté:
  25. Pressure cooked mutton pieces
  26. 1/2 tsp turmeric powder
  27. 2 tsp red chilly powder
  28. 1/2 tbsp pepper powder
  29. 1 tsp cumin powder
  30. 1 tbsp coconut oil
  31. 1/2 tbsp Chopped mint leaves
  32. 1/2 tbsp chopped coriander leaves
  33. 2.Egg mixture:
  34. 4 eggs
  35. 4 tbsp chopped onion
  36. Mutton chukka
  37. 1 tsp pepper powder
  38. 1/2 tsp salt
  39. Chopped coriander leaves
  40. 3 cups dosa batter
  41. 1 1/2 tbsp oil


  1. 1.Mutton Chukka:
  2. Grind the ingredients mentioned under ‘To Grind’ to a fine paste.
  3. Heat oil in a cooker,add fennel seeds.Let it splutter.Then add ginger paste,garlic paste and sauté until raw smell vanishes.
  4. Then add in the grinded paste and sauté for a minute.Then add in cashews,1 tbsp coconut oil,salt and mutton pieces.Saute until masalas well coated to a mutton pieces.Add in the water
  5. Pressure cook for 6 whistles in medium high flame.
  6. Transfer the pressure cooked mutton mixture to a pan and sauté for a min.Then add in the turmeric powder,red chily powder,pepper powder and cumin powder.Saute until Oil gets separated from the masalas and it should be dry.
  7. Finally add tbsp of coconut oil,mint leaves and coriander leaves.Saute for 2 mins and switch off the stove.
  8. 2.Egg mixture:
  9. In a bowl,add 1 egg,1 tbsp chopped onion,1/8 tsp salt,1/4 tsp pepper,2 tbsp mutton chukka and pinch of salt,Few corainder leaves and beat well.
  10. Heat a dosa tawa,pour a paddle of batter and spread lightly and cook for few secs.Then fadd egg mixture and spread it on the tawa.Drizzle some oil on the dosa and cook for a 2 mins in medium flame.
  11. Flip the dosa and cook for another 2 mins and switch off the stove.Serve hot with mutton kuzhambu.
  12. Repeat the above 3 steps for remaining batter.
