ABOUT Panchforon Begun... RECIPE

Its a Bengali Version of "Achari Baingan".Actually we Bengali people love to use panchforon seeds in all veg dishes.It is one of them.Its very delicious, can goes with any Indian bread.

Ingredients Serving: 5

  1. Small brinjal...300gm
  2. Panchforon seeds...2tspn
  3. Onion...1
  4. Tomato...1
  5. Dry kashmiri red chilli...2
  6. Ginger garlic paste...1tspn
  7. Turmeric powder...1tspn
  8. Red chilli powder...1tspn
  9. Green chilli...3to 4
  10. Coriander leaves
  11. Salt to taste
  12. Sugar...1/4tspb
  13. Oil

Instructions

  1. Boil tomato & dry kashmiri red chilli for few minutes.Then make it cool,remove the skin of the tomatoes & paste it with boiled chilli.
  2. Lengthwise cut the brinjals & fry it for few minutes.
  3. Fry the panchforon seeds in dry tawa for few minutes & then make a powder of it.
  4. Make a paste of turmeric powder, red chilli powder, panchforon powder with water.
  5. Now boil the tomato_chilli paste .
  6. Add panchforon_turmeric_red chilli paste in it & boil it for few minutes.After that keep aside.
  7. Now fry onion & ginger garlic paste for few minutes.
  8. Then add the masala gravy in it.
  9. After sometime add slightly fried brinjal.Cover it & let it cook.
  10. Add green chilli,salt & sugar.
  11. Add chopped coriander leaves & serve.
