ABOUT Hyderabadi Mutton Haleem RECIPE

The Hyderabadi Haleem is the best one can taste in India with lots of spices finally dressed with fried onions cashews coriander and lemon. Ramzan in Hyderabad is a synonym of mutton haleem. Almost every street in the entire city of Hyderabad has a haleem kiosk during the fasting month of Ramadan. It is relished by people of all religions and ages throughout our proud nation India.

Ingredients Serving: 6

  1. For mutton gravy :
  2. boneless mutton 500 grams
  3. Curd 1/2 cup
  4. tomatoes 2
  5. coriander leaves 1 bunch
  6. Mint Leaves 1 bunch
  7. Cardamom 2
  8. Cloves 2
  9. Cinnamon 1 inch piece
  10. Cumin seeds 1 teaspoon
  11. Ginger garlic paste 1 tablespoon
  12. Red chilli powder 1 tablespoon
  13. Turmeric powder 1/2 teaspoon
  14. Garam masala 1 teaspoon
  15. Salt 1 teaspoon
  16. Oil 2 tablespoons
  17. For frying :
  18. Onions 2
  19. Cashews 8
  20. for making Daliya :
  21. crushed wheat 200 grams
  22. masoor dal 2 tablespoon
  23. Toor dal 2 tablespoon
  24. black grams 2 tablespoons
  25. basmati rice 2 tablespoon
  26. chana dal 2 tablespoon
  27. water 5 glasses
  28. For making haleem mixture :
  29. fried onions 1 cup
  30. Oil 2 tablespoon
  31. coriander leaves 1 bunch
  32. Mint Leaves 1 bunch
  33. Black pepper powder 1 teaspoon
  34. Salt 3 teaspoon
  35. For garnishing :
  36. Ghee 1 tablespoon
  37. chopped coriander and mint leaves 1 cup
  38. Lemon 1
  39. Green chilies 2

Instructions

  1. in a frying pan add oil and fry chopped onions and cashews till golden brown. keep them aside
  2. in another pan add oil when it is hot add cinnamon cloves cardamom and cumin seeds. Saute them for a while.
  3. Add ginger garlic paste and saute till the raw smell goes.
  4. Now add turmeric powder chopped tomatoes and saute till the tomatoes get tender.
  5. now add salt red chilli powder Garam Masala mutton curd chopped coriander and mint leaves.
  6. add two glasses of water and pressure cook till 5 whistles.
  7. Allow it to cool. mash mutton along with the gravy
  8. For making dalia add the lentils and rice and saute till golden brown
  9. in another pan add crushed wheat sauted lentils and rice
  10. Add 5 glasses of water and cook till they get tender for 20 minutes.
  11. Allow it to cool and grind the mixture nicely. Keep this aside.
  12. To this dalia add mashed mutton chopped mint leaves coriander leaves half amount of fried onions salt and oil.
  13. Mix and blend them.
  14. Cook for about half an hour.
  15. Now take out haleem in a bowl and garnish with ghee fried onions chopped mint and coriander leaves fried cashews lemon and green chilies.
