Ingredients Serving: 6

  1. 1 full chicken
  2. For Masala:
  3. 4 cloves
  4. 1 stick cinnamon
  5. 1/2 nutmeg
  6. 4 green cardamom
  7. A pinch of dry ginger powder
  8. 1 tsp cumin seed
  9. 1 tsp coriander sheet
  10. 1/2 tsp fenugreek seeds
  11. 1/2 tsp carrom seeds
  12. 1/2 tsp black pepper powder
  13. 1 tsp salt
  14. A pinch of red chilli powder
  15. 1 tsp degi mirch
  16. 1 tsp oil
  17. 2 drops vinegar
  18. 1 tsp yoghurt
  19. 1 tsp garlic paste
  20. 1/2 tsp ginger paste
  21. 1/2 tsp papaya paste
  22. To garnish:
  23. Chaat masala
  24. Lemon juice

Instructions

  1. For the masala:
  2. Grind cloves, cinnamon, nutmeg, cardamom, cumin seeds, dry ginger powder, coriander seeds, fenugreek seeds, carrom seeds and black pepper together to a fine powder.
  3. Add salt, red chilli powder, degi mirch oil, yoghurt, garlic paste, ginger paste, vinegar and papaya paste. Mix well.
  4. For the main preparation:
  5. Clean the chicken and cut into pieces
  6. Coat the pieces with the prepared masala
  7. Mount the chicken in a skewer and place in the tandoor for about 2 mnts till it is half done
  8. Take the chicken out, brush with oil and cook on grill till done.
  9. Sprinkle chaat masala and lemon juice on top and serve hot
