About Sukto Recipe

Sukto is a traditional Bengali dish,made with many vegetables and at least one bitter vegetables with a pinch of sugar to adjust the bitterness.Without this typical Bengali menu is just incomplete.It is very popular in West Bengal.

Ingredients to make Sukto

  • 2 Bitter gourd
  • 1 green banana
  • 2 medium sized potato
  • 2 medium sized sweet potato
  • 2-3 hyacinth beans
  • 2 Drumsticks
  • 2 white radish
  • 10-15 bori
  • 3 teaspoon mustard paste
  • 2 teaspoon ginger paste
  • 1/2 teaspoon radhuni
  • 1-2 bay leaf
  • 1 teaspoon panchphoron or five spices powder
  • 1 teaspoon turmeric powder
  • 2 teaspoon sugar
  • 4 Tablespoon mustard Oil
  • 1 tablespoon ghee
  • 1 cup liquid milk
  • 2 cup water
  • salt to taste

How to make Sukto

  1. 1. Cut green banana, potato, sweet potato,white radish and hyacinth beans into rectangular strips,bitter gourd into half circles and drumsticks into 2" long strips after peeling the outer skin of each veggie.
  2. 2. Heat oil in a kadai,add bori to the oil and fry till brown.Keep aside.
  3. 3. After that fry bitter gourd in the same oil till golden brown.
  4. 4. Now fry green banana, potato,sweet potato, drumsticks,white radish and hyacinth beans one by one.
  5. 5. Temper remaining oil with bay leaf and radhuni.
  6. 6. Add ginger paste and cook for 1- 2 minutes .
  7. 7. Then add mustard paste and again cook for around 2 minutes.
  8. 8. Now add in turmeric powder,salt and sugar,stir well.
  9. 9. Now add milk and water to the spice mix and bring it to boil.
  10. 10. Add all the fried veggies into it and cover the kadai with a lid.
  11. 11. Cook for around 8-10 minutes in low flame or till the veggies cooked properly.
  12. 12. Add fried bori and ghee to the curry and boil for around 2 minutes.
  13. 13. Now sprinkle five spices powder and switch off the flame.
  14. 14. Mix the five spices powder well with the curry before serving.
  15. 15. Sukto is ready to serve.
  16. 16. Serve it hot with steamed rice to initiate the meal.

My Tip:

Panchphoron is a mixture of nigella,cumin seed, fenugreek seed,fennel and mustard seed in equal proportion.
