ABOUT Milky Rice Dumplings RECIPE

Its Khira Gaintha or Kheer Puli. Agreed, this is not a thandai infused holi dessert, but it’s also a festive dessert, which is made during festivals. This consists of balls of rice four dough soaked in reduced cardamom flavored milk. The rice flour is cooked with water and then kneaded to form a dough, moulded into balls, and dropped into simmering milk cream. Something like Ras Malai but instead of Chhena or Paneer balls, riceflour balls are being used in this case. Serve Khira Gaintha on its own as a delicious dessert after your satisfying meal.Khira as in Milk and Gaintha as in small balls. So in other words, these are Milky Balls.

Ingredients Serving: 4

  1. Milk– 1.5 ltr
  2. Rice – 150 gm
  3. Coconut – ¼ of a coconut
  4. Sugar -125 gm
  5. Ghee -3-4 tbsp
  6. Big cardamom – 6 pcs
  7. Salt – to taste

Instructions

  1. To start with, soak the rice for 1 hour, then wash it properly and grind into a fine and thick paste. Take ½ cup of the paste and keep aside.
  2. Make small cubes of the coconut. Crush the big cardamom seeds and make a powder out of it..
  3. Take a deep pan add water(proportionally equal to the amount of the rest rice paste) to it. Add sugar (50grm) and salt to taste to the above water and boil it.
  4. When it starts boiling again, put the rice paste and stir it for 10-15 mins on a low flame and make a fine dough out of it. Wait till the dough cools down to the room temperature, kneed the dough with ghee to make it softer.
  5. Make small balls out of the dough and keep aside. Boil milk in a deep pan, add sugar (75 grm), coconut cubes, cardamom powder, and mix it well.
  6. Add the prepared rice balls to the boiled milk and cook it for 10-15 minutes. Add salt to taste to the remaining ½ cup rice paste kept aside, add it to the above boiled milk and stir it properly.
  7. Boil the above mixture for 3 minutes on a lower flame and serve it.
