Ingredients Serving: 10

  1. For the Carrot Cake
  2. 150 grams all purpose flour
  3. 100 grams whole wheat flour
  4. 1/2 cup chopped walnuts chopped
  5. 22o grams light brown sugar
  6. 180 ml canola oil
  7. 3 eggs at room temperature
  8. 2 teaspoon vanilla extract
  9. 2 teaspoon baking powder
  10. 2 teaspoon baking soda
  11. 1/2 teaspoon salt
  12. 1 & 1/2 teaspoon cinnamon powder
  13. 1/2 teaspoon clove powder
  14. 1/4 teaspoon nutmeg powder
  15. 60 ml yogurt
  16. 240 grams grated carrots
  17. For cream cheese frosting
  18. 2 tablespoon whipping cream
  19. 100 grams unsalted butter at room temperture
  20. 220 grams cream cheese at room temperature
  21. 150 grams icing sugar
  22. 1 teaspoon vanilla extract
  23. 2 teaspoon orange zest
  24. 1/8 teaspoon salt

Instructions

  1. Preheat the oven to 180 degrees C. Grease two square baking tin with butter.
  2. In a medium bowl add brown sugar, oil, eggs, milk and vanilla extract. Using a hand held mixer whisk well until combined.
  3. In another large bowl add all purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, clove powder, nutmeg powder. Mix together until combined.
  4. Add the wet ingredients into the dry ingredients fold until the mixture is just combined. Then carefully fold in grated carrots and chopped walnuts. Do not overmix the batter at any point.
  5. Pour the batter evenly into the greased cake tins. Bake for about 55 minutes to an hour. Insert a skewer to check for the doneness, if it comes clean your cake is done.
  6. Allow it to cool in the tin for 5 minutes before transferring it to wire rack.
  7. For the frosting - using a handheld mixer beat the butter and cream cheese for about 2 minutes until smooth. Add the icing sugar and 2 tablespoon of the whipped cream, beat well on medium speed for about 1 - 2 minutes.
  8. Add vanilla extract and beat again for about a minute. Next fold in the orange zest. Your frosting is ready.
  9. After the cake has been cooled completely, spread the cream cheese frosting using a serrated knife and sprinkle some chopped walnuts over it.
  10. Enjoy with a cup of coffee or tea!!
