ABOUT Broccoli Chicken Soup with Cheddar Cheese RECIPE

Many consider Broccoli as the world’s healthiest food. Broccoli can act as detoxification agent; a supplement of Vitamin D; and also it contains many minerals and vitamins which are beneficial for our health. This time, we will prepare Broccoli Soup with Shredded Chicken and Cheddar Cheese. This makes the soup thick and very delicious.

Ingredients Serving: 4

  1. 200 gms – 250 gms of Broccoli with medium Broccoli head
  2. 1 medium sized onion
  3. 2 garlic cloves
  4. 1 cup of whole Milk
  5. 1 tablespoon of all-purpose Flour
  6. 3 tablespoon of butter
  7. 3 – 4 Cheddar Cheese Cube or 2 tablespoon of grated Cheddar Cheese
  8. 1 teaspoon of crushed Black pepper
  9. 1 / 2 teaspoon of Oregano or any other mixed dry herbs
  10. 100 grams of boneless chicken pieces
  11. salt
  12. sugar
  13. 1 cup of vegetable stock


  1. First, we need to blanch the Broccoli to get rid of the smell of the Broccoli and any insects or impurities if any. To do this, boil 2 cups of water in a deep pan.
  2. Then break the broccoli in small pieces. Switch off the flame and add the small pieces of Broccoli in it. Keep it aside for 5 minutes and then drain the water. Keep 2-3 florets for garnishing.
  3. Heat 1 tablespoon of butter in a pan, and add the chicken pieces in it. Add a pinch of salt. Fry the pieces for 3 – 4 minutes in medium flame. After that, take out the Chicken pieces and make thin shredded pieces out of it, using hand.
  4. Again add rest of the 2 tablespoon of Butter in the pan. Add the chopped onion, garlic cloves in it and sauté till they soften.
  5. Add Flour in it and stir continuously for another 2 minutes in low flame
  6. Then add the drained Broccoli pieces. Add the vegetable stock in it.
  7. Add a pinch of salt and stir well. Cover the lid and cook for another 6 – 7 minutes in medium flame.
  8. After 6 – minutes, take off the Broccoli mixture out of the oven, and bring it to room temperature. Then blend the mixture using a hand blender or by using a mixer grinder. You will get a thick soup.
  9. Now, heat the Milk. There is no need to boil the milk.
  10. Take the deep pan, add the blended Broccoli mixture in it and heat in low flame. Now add the warm milk in it and stir well.
  11. Add the shredded Chicken pieces in it.
  12. Add the shredded Chicken pieces in it.
  13. Now add the Cheese in it, and when the Cheese started to melt, stir well so that the Cheese can also blended together within the soup.
  14. Finally, season the Broccoli soup with Oregano or other mixed dry herbs.
  15. Now take 3 – 4 soup bowls and serve the delicious and healthy Broccoli Soup with Shredded Chicken and Cheddar, garnish it with the Broccoli florets.
