Generally it is prepared in different occasion in Rajasthan for saawan teej in August and for Rakshabandhan also.. Ghevar is Round Disc shape Cake which is available in many varieties like Malai Ghevar, Rabdi Ghevar, kesar Pista Ghevar,plain ghewar sweet and non sweet also. In rajsthan non sweet ghewar is eat with kheer..

Ingredients Serving: 5

  1. for ghewar=1 cup or 250 grams all prpose flour
  2. 1/4 cup or 50 grams ghee
  3. 1/4cup or 50 gram milk
  4. 7-8 ice cubes
  5. chilled water as requird
  6. ghee or oil for frying
  7. for sugar syrup-
  8. 1 cup sugar
  9. 1 cup water
  10. 1 pinch yellow food colour
  11. 2 tsp lemon juice
  12. for rabdi-
  13. 4 cup full fat milk
  14. 150 grams mawa
  15. 150 grams sugar or taste according
  16. 1 tsp cardamom seeds crushed
  17. For Garnish-
  18. 8-10 pistachios Blanch peeled sliced
  19. 8-10 almonds Blanch peeled sliced

Instructions

  1. first of all we will make sugar syrup ..In a pan add sugar, water and let it boil..Keep stirring..When it reaches 1 string consistency it done.. Switch off the flame..Add 1 tsp lemon juice to avoid sugar crystals..Cover it and keep it aside..
  2. now we make rabdii for rabdii In a heavy bottom pan add milk,sugar and cardamom mix well and let it boil on slow medium flame till it reduces 1/4 in quantity.now we add mawa and mix them well it become thick paste like consistency..
  3. Rabdi should be in white color not yellowish.... if u like yellowish u can add a pinch of yellow food colour.Switch off the gas..Keep it out in another bowl..Let it keep in Fridge for chill.
  4. Now work on ghevar..seive all purpose flour keep it aside.. in a big bowl add ghee add 8-10. Cubes of ice beat it with help of hands till ghee become more whiter and fluffy and smooth in texture..Now remove ice..
  5. Add all purpose flour little by little once..Add milk first make smooth lump free paste add more flour milk and repeat this process when milk over we will add chill water.. until flour finish.add pinch of yellow food colour and 1 tsp lemon juice.
  6. Batter of Ghevar should look like pouring consistency batter like full fat milk..
  7. In a thick bottom tall hight we say milk boil pan but we need tall in hight..At least 5" tall..Add 1/4 of ghee of the pan so ghevar can fry whole..Heat ghee at its high..We want ghee is hot enough..
  8. Pour laddle full batter from at least 1 feet hight of gas.. make holes in center of Ghevar..So proceess can repeat..
  9. When foam settles down repeat this process with another laddle full. Batter in center..Keep repeat this process until you pour cup full or 250 ml batter consistency
  10. When it nicely brown in color keep it out with help of skewer or stick carefully over a plate
  11. Repeat this process till batter finish up..And make rest 5-6 ghevar like this
  12. Put Ghevar on one by one like stack..Pour warm sugar syrup over first Ghevar by tbsp..So other ghevar also can moist.and sugar syrup don't waste..abd u can do it with one by one alsoo...its on ur choice.
  13. Now garnishing.. spread chill Rabri over ghevar..Garnish it with pistachios and almonds slices and silver vark and saffron.. Serve and enjoy.
