Palua also known as Arrowroot lumps, available abundantly in forest areas of Odisha. It works like a thickner in food and has a cooling proerty.This traditional, healthy and delicious rrcipe is very much popular in Summer there and people take this while falling sick as it works as a immunity booster too.

Ingredients Serving: 4

  1. Palua 1/4 cup
  2. Milk 1litre
  3. sugar 1/4 cup
  4. cardamom powder 1/4tsp
  5. Black pepper powder a pinch
  6. ghee a little to grease plate
  7. Tutti fruitty for garnishing


  1. Soak palua in water
  2. After sometime, it will set in bottom of the dish
  3. Throw the water above and dust particle that floats on top.
  4. Again add some water to this.
  5. Repeat this cycle 2-3 times
  6. Once u drain all water, you will get clean palua at the bottom.
  7. Now boil milk.
  8. Once boils well, add sugar.
  9. Add palua and stir continuously.
  10. It will become thick like custard.
  11. Now add cardamom powder and black pepper powder to this.
  12. Grease a plate and pour this on to the plate
  13. Add tutti fruitty on top.
  14. Let it come to room temperature.
  15. Refrigerate this
  16. Cut desired shape and serve chilled
