The matcha (green tea) brings an added dimension to a strawberry scone

Ingredients Serving: 4

  1. 3 cups all-purpose Flour
  2. 1 tbsp. Baking powder
  3. 1 tsp. Salt
  4. 1/3 cup Sugar
  5. 1+1/3 cup Cream
  6. 1 tbsp. Matcha powder
  7. 1/3 cup chopped Strawberries
  8. Brown sugar for topping

Instructions

  1. Line baking tray with parchment paper and preheat your oven at 220C.
  2. Take all the dry ingredients except Macha powder in a bowl and dry whisk them. Combine matcha powder and cream until well combined.
  3. Slowly add this matcha cream mixture in dry ingredients. Stir to combine using a wooden spoon. Add in strawberries.
  4. At this point the mixture will look shaggy and lumpy, but don’t worry; it will come together in a while.
  5. Dust the cooking surface and empty the dough onto it. Flatten it into disk (I did not use rolling pin).
  6. Cut into seven scones, using cookie cutter. Sprinkle brown sugar on top and bake for 12-14 minutes for 25 minutes. Serve warm.
