Ingredients to make Irish Chocolate Potato Cake

  • Cold potato puree - 1/2 cup [see preparation in steps]
  • Whole wheat flour 1 1/2 cups
  • Baking powder 1 1/2 tsps
  • baking soda - 1/2 tsp
  • Cocoa powder - 3 tbsp
  • Custard powder - 1 tsp
  • Milk (Divided) - 1 cup and 1 tbsp
  • honey - 1 tbsp
  • Powdered sugar (Divided) - 1/2 cup and 2 tbsp
  • Cooking oil - 1/3 cup
  • Vanilla essence - 1 tsp
  • Substitute for 1 egg : [to be mixed just before adding]*
  • 1 1/2 tsp cornflour
  • A pinch of baking soda
  • A pinch of baking powder
  • 2 tbsp water

How to make Irish Chocolate Potato Cake

  1. Potato puree preparation - Pressure cook 1 large potato upto 4-5 whistles. Allow to cool completely. Peel and mash it roughly. Pulse it in an electric mixer to get rid of any lumps. Refrigerate the sticky potato puree. Use 1/2 cup of this.
  2. Preheat oven at 180 degrees centigrade for 10 minutes.
  3. Sieve the flour, baking powder, baking soda, cocoa powder and custard powder together 5-6 times. This helps to aerate the mixture and combine the ingredients uniformly.
  4. In a large bowl beat the oil and sugar together.
  5. Add the honey, egg substitute and vanilla essence. Mix well.
  6. Stir in the potato puree. Add the milk and beat/whisk well for 5 minutes.
  7. Fold in the sifted flour until no lumps remain. Spoon the batter into a greased and lined baking dish. [8 inch round tin]
  8. Smoothen the top with a spatula.
  9. Bake in the pre heated oven at 180 degrees for 30-35 minutes or until skewer inserted comes out clean.
  10. Invert over a wire rack after 10 minutes.
  11. Allow to cool completely before slicing.

My Tip:

The egg substitute must be prepared just before using it. The combination of cornflour with a bit of baking powder and soda along with water makes a great egg replacement. The batter thickness may be adjusted with a couple of tbsps of milk if needed. This is because the consistency of potato puree may not be the same every time. The potato puree must be free of lumps. Passing it through a sieve helps getting a smooth puree. I prefer making the puree beforehand. Makes the work much easier.
