Ingredients Serving: 5

  1. 1 whole chicken cut into 10-12 pieces
  2. 3 tbsp oil
  3. 15-17 curry leaves
  4. 1/2 cup chopped coriander leaves
  5. Salt to taste
  6. Water as required
  7. For Marination
  8. Chilli Powder 2 tbsp
  9. Ginger garlic paste 1.5 tbsp
  10. 1 teaspoon turmeric
  11. Salt to taste
  12. Lemon juice 2 tbsp
  13. Coriander powder 1.5 tbsp
  14. 1.5 teaspoon garam masala
  15. For Kolhapuri masala
  16. Fennel seeds 2 teaspoon
  17. 1 teaspoon cumin seeds
  18. 2 BLACK CARDAMOM
  19. 3-4 GREEN CARDAMOM
  20. 2 tbsp sesame seeds
  21. 1/2 cup grated Coconut
  22. 2 Mace
  23. 1 star anise
  24. 2 teaspoon peppercorns
  25. 4-5 cloves
  26. 2 teaspoon poppy seeds
  27. 5-6 dry red chilli
  28. 1 inch cinnamon stick
  29. 2 tbsp Oil
  30. 1/2 kg onions
  31. 3 -4 medium tomatoes chopped

Instructions

  1. Marinate chicken with all ingredients mentioned under Marination section for 30 minutes to 1 hour
  2. Heat 2 tbsp oil in a pan. Roast whole spices, sesame, poppy seeds and dry red chilli for few seconds
  3. Add coconut , onions, little salt and roast until golden brown
  4. Allow to cool completely. Grind the mixture with chopped tomatoes and adequate water to form smooth Puree
  5. Heat 3 tbsp oil in a pan. add curry leaves and saute for few seconds. Add ground puree. Cook for 4-5 minutes until oil seperates
  6. Add chicken, salt and water. Mix well. Bring to boil
  7. Cover and Simmer until chicken is cooked stirring occasionally
  8. Add coriander leaves and mix well. Garnish with fresh chopped coriander leaves. Serve hot with rice, bhakri or chapatis
