Khira manda is a delicious traditional recipe of Odisha. It is nothing but rice dumplings with sweet chhena/coconut stuffing and boiling in milk.

Ingredients Serving: 6

  1. rice paste -250gm
  2. salt -1/2tbsp
  3. Sugar-1/4cup+1/2cup
  4. cardamom powder-1/2tbsp+1/2tbsp
  5. water -1glass
  6. Ghee-1tbsp
  7. Chhena-from 1liter milk
  8. Jaggery-1/2cup
  9. Milk -1/2liter


  1. Put jaggery in a pan.
  2. Put it on the gas stove.
  3. When it get caramelized add the chhena to it.
  4. Add cardamom powder and cook it for 5min till the chhena becomes dry.
  5. In another pan pour 1glass of water. Add salt, one portion of sugar and ghee to it.
  6. Then pour the rice paste and continuously stir it to make a dough.
  7. Switch off the flame. Cover it for 10minutes. Knead gently to a smooth dough.
  8. Make small balls of the rice dough. Put the stuffing inside it.
  9. Follow the procedure for rest of the dough and make all Mandas.
  10. In another vessel put the milk and allow it to boil for 5minutes.
  11. Put the mandas into the milk.
  12. Add cardamom powder to it . Boil it for 10minutes.
  13. Switch off the flame. Let it becomes cool down and enjoy the Khira mandas.
