ABOUT Scalloped Potatoes With Baked Eggs & Corns RECIPE

Scalloped Potatoes With Baked Eggs & Corns is a delicious combination of finely sliced potatoes, cooked in heavy cream and milk and then layered & topped with a lots of grated cheese. It is a type of gratin in which an ingredient is topped with a browned crust, often using breadcrumbs, grated cheese, egg and butter. Ingredients Serving: 4

  1. 5 potatoes, cut into paper thin slices
  2. 2 cups Milk
  3. 1 cup Heavy Cream
  4. 1 clove garlic
  5. 3 tablespoons softened butter
  6. 2 tablespoons corn kernels
  7. 1 tomato, finely chopped
  8. 1 teaspoon pepper powder
  9. 1 cup cheese, grated
  10. 1 Teaspoon oregano
  11. 1 teaspoon chilli flakes
  12. 1 egg
  13. salt as needed

Instructions

  1. To begin making the Scalloped Potatoes With Baked Eggs & Corns, In a large thick bottomed pan combine sliced potatoes and milk over high heat. Bring it to a boil, and immediately reduce heat to low. Cover and cook for about 3 minutes or unt
  2. In a large strainer, drain the potatoes and reserve the starchy milk. Add around 1/2 cup milk to the starchy milk to increase its quantity.
  3. Take a 4" inch baking tray, grease it with butter and garlic at the bottom. Now arrange the potato slices in the baking dish and season it with salt and pepper.
  4. The next step is to sprinkle corn kernels and chopped tomatoes all over.
  5. Dot with remaining butter and pour the reserved cooking milk and cream on it. Sprinkle cheese over top and season it with oregano and chilli flakes.
  6. Put the baking dish into a pre heated oven at 325 degree Celsius and bake for around 15 minutes.
  7. Now take off the dish and break an egg over the scalloped potatoes and again bake it for 10-15 mins. After 10-15 minutes, remove the dish from the oven and serve immediately.
  8. Serve Scalloped Potatoes With Baked Eggs & Corns on its own for a light and healthy dinner.
