Perfect monsoon snacky these crunchy cheesy fritters works excellent when paired with a mango chilli salsa and sour cream!!

Ingredients Serving: 10

  1. 5 large potatoes washed, peeled, cooked and mashed.
  2. 1 cup finely diced cooked broccoli.
  3. 2 medium red onions.
  4. 2 tbsps dry garlic powder.
  5. 2 cups mozarella cheese grated.
  6. 1/2 cup parmesan cheese.
  7. 1 tsp dry parsley.
  8. 2 or 3 bread slices.
  9. Panko bread crumbs.
  10. salt and pepper as required.
  11. 2 tsp red chilli flakes.
  12. Veg oil for frying.
  13. Cut and cubed mango with chilli flakes for the salsa. lemon wedges. sour cream for dip.
  14. Egg mixture for rolling the patties in.

Instructions

  1. Saute the onion till brown and soft. Mix all the ingredients and leave in fridge to firm up for an hour. Take the mixture out and shape them in to patties or finger shapes. Heat the oil. Dip the patties in egg.
  2. Roll them in the bread crumbs and fry till golden brown. Alternatively bake them in a preheated oven of 425 degree F for 12 to 15 minutes flipping them half way on a well oiled baking sheet.
