This is a very common veg. Receipe in sindhi's. We all love this dry roasted vegies..it is very easy to make.on tava or frying pan.

Ingredients Serving: 3

  1. Brinjal...2
  2. Potato...2
  3. Capsicum..2
  4. Onion...2
  5. Green mango..1
  6. For capsicum stuffing...
  7. Besan (gram flour)4 tab.spoon
  8. Salt red chilly powder coriander powder turmeric all mixed 1 and half tab spoon
  9. Oil 2 tab.spoon

Instructions

  1. Cut all vegies in half except capsicum and onion
  2. Cut top of Capsicum and cut cross the whole onion .
  3. Cut half slits all vegetables shown in the pic
  4. Mix salt ,turmeric powder, chilly powder ,coriander powder.
  5. Fill this in all middle cut vegetables.
  6. Put in the frying pan one by one
  7. Mix besan ,salt ,turmeric powder ,coriander powder, garam masala powder, red chilli powder
  8. Fill it in top side of the caosicum.
  9. Put it in the pan. Pour oil on all vegetables.
  10. Close the lid.on slow flame
  11. Let it cook for 15 minutes. And time to time move little the pan.
  12. So that all the vegetables get proper flame.
  13. After fifteen minutes open lid and turn all vegetables one by one.
  14. And again cover with lid
  15. After 10 to fifteen minutes it will cook so nicely.
  16. Serve it with hot roties.
