Ingredients Serving: 4

  1. Small baby Potatoes - 500 grams (boiled and peeled)
  2. Onion - 1 big (grated)
  3. Ginger paste - 1 tablespoon
  4. Garlic paste - 2 tablespoons
  5. Cumin powder - 1 teaspoon
  6. Coriander powder - 1 teaspoon
  7. Red chilli powder - 1 teaspoon
  8. Turmeric powder - 1/2 teaspoon
  9. Garam masala powder - 1/2 teaspoon
  10. Dry mango powder - 1/2 teaspoon
  11. Solid tamarind paste with pulp extracted after soaking in hot water - 1 tablespoon
  12. Oil - 1/4 cup
  13. Salt to taste
  14. Sugar - 1/2 teaspoon (optional)
  15. For tempering:
  16. Cumin seed - 1/2 teaspoon
  17. Bay leaf - 2
  18. For garnishing:
  19. Cumin seeds - 1 teaspoon
  20. Dry red chilli - 2 (dry roast both and grind to make a fine powder)
  21. Chopped coriander leaves - 1/2 cup

Instructions

  1. Heat oil in a pan, temper the oil with cumin seeds and bay leaves. Let the cumin seeds splutter.
  2. Add grated onion and fry until golden brown.
  3. Add ginger garlic paste and cook for a few seconds.
  4. Add cumin, coriander, turmeric, red chilli powder and dry mango powder. Mix properly and cook until oil gets separated.
  5. Add the baby potatoes and mix with masala.
  6. Add tamarind pulp, sugar and salt. Cook for 2 minutes on a low flame, continuous stirring is required.
  7. Add 1/4 cup water, bring it to a boil, when the water will start boiling, simmer the gas and cook until the water is absorbed by the potatoes. It should be a dry gravy, add garam masala powder. Mix well and cook for 1 minute.
  8. Turn off the heat. Transfer into a serving bowl.
  9. Sprinkle chopped coriander leaves, roasted cumin seeds and red chilli powder on top. Mix well.
  10. Serve hot with toothpick. It is easy to eat this dry aloor dum or potato curry with toothpick.
