ABOUT Khushka RECIPE

Khushka is a popular south indian pulao recipe particularly from the hyderabadi cuisine.It is made without any vegetables or meat.Basmati rice is cooked in ghee with spices.

Ingredients Serving: 2

  1. 2 cups Basmati Rice
  2. 3 tblsp ghee
  3. 1 small onion
  4. 2 pc green cardamom
  5. 2 pc clove
  6. 1 pc black cardamom
  7. 1" cinnamon stick
  8. 8-10pc whole black pepper
  9. 2 pc bay leaves
  10. 1 pc staranise
  11. 1 tsp black zeera
  12. 2 tsp sugar
  13. Salt according to taste
  14. 4 cups water
  15. 1/4 cup Milk
  16. a pinch of yellow colour

Instructions

  1. Wash and soak the rice for 1 hour.
  2. Finely slice the onion.
  3. Fry the onion in ghee until golden brown.drain and keep aside.
  4. In a vessel heat ghee.
  5. Add in the whole spices.
  6. Once the spices star to crackle add in 4 cups of water.
  7. Add in the salt and sugar.Bring to boil.
  8. Now add in the rice and cover with lid.
  9. Once the water starts to dry up lower the flame.
  10. Mix the yellow colour in 1/4 cup milk.
  11. When the water dries up pour this mixture into the rice.
  12. Now put back the lid of the vessel and place something heavy on top so that the steam does not escape.
  13. Cook for about 15 minutes.
  14. Garnish with brown onion.
  15. Enjoy with any veg or non veg gravy of your choice.
