ABOUT Shrikand Swiss roll cake RECIPE

Shrikhand is made from Sweetened hung yogurt flavoured with cardamom powder and studded with crunchy mixed nuts. The addition of saffron gives it a beautiful colour and aroma. Shrikhand stuffed in Swiss roll cake make a delicious combination for any festival.

Ingredients Serving: 10

  1. Hung curd 100 grams
  2. Milkmaid 2tbs
  3. Saffron 1/8 teaspoon
  4. Whipping cream 100 grams
  5. Maida 80 gm
  6. Milk powder 80 gm
  7. Sunflower oil 2 tbs
  8. Powder sugar 40 gm
  9. Baking powder 1/2 tsp
  10. Baking soda 1/8 tsp
  11. Water or milk 60 ml
  12. Sugar water 1/2 cup
  13. Almond and pistachio slices 1/8 cup
  14. Dry rose petals 2 tbs
  15. Almond or saffron essence 1 /2 tsp

Instructions

  1. Mix hung curd or yogurt, milkmaid and saffron cardamom powder and Beat on Slow speed add yellow food color is needed. Saffroni Shrikhand is ready.
  2. Sieve meida baking powder, milk powder, sugar powder and baking soda three times.
  3. Add oil and water or milk beat with bitter and make cake batter ready.
  4. Per heat the oven at 160*c for 10 minutes
  5. Line the baking tin with parchment paper.
  6. Pour the batter in the thin layer. Bake in oven for 20 to 25 minutes at 160*c.
  7. Remove the cake from oven and transfer on wet towel remove the parchment paper and roll the cake in wet towel and let it cool.
  8. Beat the whipping cream till thick add Shrikhand and beat for more 1 minute.
  9. Remove the cake from wet towel and soak with sugar syrup apply above Shrikhand mixed whipped cream. Sprinkle almond and pistachio slices and roll the cake and roll on almond pistachio slices and dry rose petals.
  10. Cover the Swiss roll in parchment paper or cling wrap for 1 to 2 hours in refrigerator.
  11. Remove the Shrikhand Swiss Roll Cake from refrigerator and slices them.
  12. Serve Shrikhand Swiss Roll Cake and enjoy your festival.
