ABOUT Kashmiri Roth RECIPE

Roth is a traditional Kashmiri dish which carries several cultural and religious beliefs . Roth is a sweet bread / cake / cookie with lots of dry fruits . It holds its importance during Pun festival which is the most significant religious festival of the Kashmiri Pandit community . The other side , these Roths were prepared during wedding ceremonies to be sent with the new bride . Roth is distributed among families to spread and share happiness and joy . Roth making differs from one region to another . Roth is famous among Kashmiri Muslims as well as Pandits with their own cooking variations . When some natives bake in a tandoor while the rest fry in ghee .

Ingredients Serving: 10

  1. Whole wheat flour 2 cups
  2. sugar 1/2 cup
  3. Black cardamom powder 1/4 teaspoon
  4. ghee 4 tablespoons
  5. water as required or 1/2 to 3/4 cup
  6. ghee for deep frying
  7. yogurt 1/4 cup
  8. pistachio powder 1/4 cup
  9. almonds 30
  10. Poppy seeds 4 tablespoons
  11. Powdered sugar for garnishing

Instructions

  1. In a bowl , take whole wheat flour .
  2. Add ghee , sugar , cardamom powder and start mixing together .
  3. Start kneading the dough by adding required water gradually . Knead to a soft dough .
  4. Grease the dough with ghee . Cover and rest for 20 minutes .
  5. Heat ghee in a pan for deep frying .
  6. Divide the dough into medium sized balls .
  7. Press each ball in between palms to flatten the ball to disc like thick Roths. Shouldn’t be thin .
  8. Brush roths with yogurt .
  9. Gently press almonds on every Roth .
  10. Sprinkle poppy seeds .
  11. Sprinkle pistachio powder .
  12. Now gently drop Roths one by one in the hot ghee . Fry till golden brown in medium heat .
  13. Puffy aromatic Roths are ready .
  14. Garnish with pistachio powder and powdered sugar .
